At my house, we love to make quick but super flavorful dinners during the school week. It’s important not to sacrifice flavor when you need to quickly whip up a dinner. Having some recipes that are just that are key to great dinner every night. My Mediterranean Kofta Kebabs recipe is just that! It’s super flavorful with all the spices in the beef mixture, can be prepared in advance, and cooks in just minutes! We like to serve it with Israeli salad, hummus, tahini, and pita; all our favorite Mediterranean fix-ins. After one try, this will become a favorite in your house too!
Mediterranean Kofta Kebabs
WHAT YOU’LL NEED
For the Kofta Kebabs:
- 1 large onion halved
- 2 cloves garlic peeled
- ½ cup fresh parsley
- ¼ cup fresh mint
- 1 lb ground beef
- 1½ teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon cayenne powder
- ½ teaspoon cinnamon powder
- ¼ teaspoon allspice powder
- ½ teaspoon salt
- ¼ teaspoon pepper freshly ground
For the Israeli Salad:
- ½ large cucumber chopped (About 1 Cup)
- 2 plum tomatoes chopped (About 1 Cup)
- ½ lemon juice
- 1 tablespoon dill
- ¼ teaspoon salt
- ¼ teaspoon pepper
Serve With:
- 4 large pitas warmed
- Tahini
- Lemon Wedges
- Parsley chopped
Instructions
For the Kofta Kebabs:
- In a food processor blend the onion, garlic, parsley, and mint. Add in the ground beef, cumin, coriander, cayenne, allspice, cinnamon, salt, and freshly ground pepper, then blend until fully combined. Split the meat into eight, evenly sized, pieces and form into logs on wooden skewers.
- Cook on a grill or grill pan for 2-3 minutes per side. Serve immediately with an assortments of pita, hummus, tahini, Israeli salad, lemon wedges, parsley and all your favorite sides!
For the Israeli Salad:
- Place the cucumber, tomatoes, lemon juice, dill, salt, and pepper into a medium sized bowl. Mix until fully combined. Serve chilled.
