Your breakfast is about to get upgraded!
Every morning the absolute first thing on my mind in breakfast. I pop out of bed and head straight to the kitchen to eat. Nothing can stop me from of eating my breakfast. The 7 hours I get of sleep every day is the longest I go without eating. What can I say? I’m a foodie! So breakfast is not an option for me but a necessity. On typical school days, I just have cereal because who has time? But I always welcome the chance when I get to make a fancier breakfast.
Y’all know that I love my carbs. One of my all-time favorite forms is a slice of crusty artisan bread.(And cookies…duh!) Not only do I love eating artisan bread, but I even love making them. It is way easier than you’d think. I have a great no-knead Homemade Artisan Bread recipe that I posted on the blog, a while back. It looks super impressive, but believe me, its a piece of cake. So using a thick slice of sourdough bread was a no-brainer. The sweet whipped ricotta and berries combo is a new favorite of mine. After one bite, it will be one of your’s too. It is the perfect way to kick off spring!
Also, did I mention that this breakfast is totally Instagram-worthy. It’s got everything thing you need for the ultimate breakfast goals. You know, a nice slice of sourdough bread, with a schmear of sweet whipped ricotta which is topped with the freshest fruits and mint, then finished off with a drizzle of honey. This picture of this yummy toast sure beats a photo of my cereal bowl, any day!

Whipped Ricotta Toast with Berries
WHAT YOU’LL NEED
- 1 cup ricotta
- 1/4 cup heavy whipping cream
- 2 teaspoons sugar
- ½ teaspoon lemon juice
- Sourdough Bread sliced
- Assorted Berries
- Honey
Instructions
- In a large bowl whisk together the ricotta, cream, sugar, and lemon juice until slightly fluffy.
- Brush your slices of sourdough bread with olive oil and toast on a hot pan or in the oven.
- Spoon the whipped ricotta on top of the toasted bread. Top with the assorted berries and drizzle with honey.
