Wild Mushroom Impossible Cheeseburger with Roasted Garlic Aioli

In this week’s episode of Extreme Kitchens, I am partnering with Impossible™ Foods and cooking a delicious Wild Mushroom Impossible™ Cheeseburger in the middle of a supermarket! I topped the #ImpossibleBurger with sauteed wild mushrooms and a flavor-packed roasted garlic aioli served up on a toasted bun with lettuce. I’m not saying it’s the best burger ever made on Earth, but I’m not saying it isn’t! 

Wild Mushroom Impossible Cheeseburger with Roasted Garlic Aioli

WHAT YOU’LL NEED
 

For the “Roasted” Garlic Aioli

  • 1 tablespoon olive oil
  • 6 cloves garlic peeled and roughly chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Kosher salt to taste
  • Freshly ground pepper to taste

For the Wild Mushrooms:

  • 2 teaspoons vegetable oil
  • 1/2 red onion sliced
  • 2 cups of assorted wild mushrooms sliced
  • 2 cloves garlic sliced
  • 1/2 teaspoon oregano
  • Pinch of red chili flakes
  • Kosher salt to taste
  • Freshly ground pepper to taste

For The Impossible™ Cheeseburger:

  • 4 Impossible™ Burger patties
  • 2 tablespoons vegetable oil
  • Kosher salt to taste
  • Freshly ground pepper to taste
  • 4 slices muenster cheese
  • 1 piece lettuce
  • 4 hamburger bun

Instructions
 

  • 1For the “Roasted” Garlic Aioli:
  • In a small pan, fry the garlic in the olive oil, until golden brown. Blend the garlic, mayonnaise, lemon juice, salt, and pepper in a small blender, until fully combined. Pour into a small bowl and set aside until serving.

For the Wild Mushrooms:

  • Heat the oil in a large frying pan on high heat. Add the onion, wild mushrooms, and garlic. Cook until softened. Add in oregano, red chili flakes, salt, and pepper to taste. Cook, stirring, until caramelized.

For the Impossible Cheeseburger:

  • Heat oil in a large frying pan. Season each patty with salt and pepper. Place each patty into the pan and fry for 3-4 minutes until golden brown on the bottom. Flip and immediately top with a slice of cheese. Cover with a lid and allow to cook for 3-4 minutes until the burgers are fully cooked and the cheese is melted.
  • Toast the buns then spread the roasted garlic aioli on the top half, top with a piece of lettuce, the Impossible™ burger, sautéed mushrooms, and finally the top bun. Serve immediately.
