Soft Scrambled Eggs On Toast
WHAT YOU'LL NEED
- 4 whole eggs
- 2 tablespoons butter
- Kosher salt to taste
- ½ inch slice of sourdough bread toasted
- Flakey sea salt to taste
- Freshly ground black pepper to taste
- Red pepper flakes to taste
- Chives thinly sliced
Instructions
- Crack the eggs into a medium-sized bowl along with the kosher salt. Using a whisk whip the eggs until completely combined and pale yellow in color.
- Melt the butter in a small nonstick frying pan on medium-low heat. Add in the eggs and cook, stirring continuously until small curds form, and the eggs are moist and just barely set.
- Spoon the eggs over the toast then top with flakey sea salt, freshly ground black pepper, red pepper flakes, and chives. Serve immediately.
