What’s your favorite fish in the whole wide world? Mine is without a doubt salmon. It’s probably obvious by all the salmon recipes I’ve posted on the blog. Today I found one of my new favorites, this Pomegranate Glazed Salmon. Not only does it make enough to feed a whole family in under 30 minutes but it’s also incredibly delicious and beautiful. I was inspired by flavors of the middle east with the pomegranate and cumin in the glaze, additionally, I added other ingredients to further enhance the flavor. When you take a piece of the salmon and dip it in the caper sauce, it makes for an incredibly flavorful bite.
Pomegranate Glazed Salmon
WHAT YOU’LL NEED
- 3-4 lb skin-on salmon pin-boned
- ½ cup pomegranate concentrate
- 1 tablespoon orange zest
- 1 garlic clove minced
- 1 teaspoon cumin lightly crushed
- Cayenne pinch
- Salt pinch
- Pepper pinch
- ½ cup greek yogurt
- ¼ cup mayonnaise
- 1 tablespoon capers roughly chopped
- ½ cup fresh pomegranate seeds
- Basil for garnish
Instructions
- Preheat the oven to 450 degrees Fahrenheit. Place the piece of salmon, skin down, on a baking sheet lined with parchment paper and set it aside.
- In a medium-sized bowl, mix together the pomegranate concentrate, orange zest, garlic, cumin, cayenne, salt, and pepper, until fully combined. Brush the pomegranate glaze all over the top of the salmon. Place in the oven to bake for 15-20 minutes. The cooking time will vary depending on the thickness of the salmon and the desired doneness.
- Meanwhile, in a small bowl combine the Greek yogurt, mayo, and capers, until fully combined.
- Remove the salmon from the oven and top with fresh pomegranate seeds and basil. Serve hot or cold.
