It’s now absolutely FREEZING outside, and all I want is to be inside with a hot drink in-hand sitting on the couch with my cat. You all know I am the furthest thing from basic, so powdered hot cocoa packets don’t cut it for me, I make it from scratch! It’s super easy to do, and chances are, you already have most of the ingredients in your kitchen. To make it even more extra, I top mine with homemade marshmallow fluff with store-bought fluff or mini marshmallows are a nice way to top it off too!
This hot cocoa is extra THICC!
Thick Hot Cocoa With Homemade Marshmallow Fluff
WHAT YOU'LL NEED
For the Thick Hot Cocoa:
- 1 ½ cups whole milk
- ½ cup heavy cream
- 3/4 cup semisweet chocolate chips
- 3 tablespoons sugar
- 1 tablespoon cocoa powder
For the Marshmallow Fluff:
- 1/4 cup + 2 tablespoons water divided
- 2 teaspoons unflavored gelatin powder
- 1 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
Instructions
For the Thick Hot Cocoa:
- In a small saucepan, heat up the whole milk and heavy cream until it’s almost boiling. Remove it from the heat and add the chocolate chips, sugar, and cocoa powder. After 2 minutes, whisk the mixture together until completely combined. Simmer on a low flame, stirring continuously, for about 10 minutes until the mixture is thickened slightly. Meanwhile, prepare the marshmallow fluff.
For The Marshmallow Fluff:
- In the bowl of a stand mixer fitted with the whisk attachment, combine ¼ cup water and the gelatin. While the gelatin blooms, heat up a small pot with the sugar and 2 tablespoons water on a medium flame. Bring the sugar to a boil and cook, stirring occasionally, until it reaches a temperature of 240 degrees Fahrenheit or the softball stage. Remove from the heat immediately.
- Turn the stand mixer on medium speed and slowly pour in the sugar. Once all the sugar has been added, increase the speed to high and whip until thick and fluffy, about 10-12 minutes. Add in the salt and vanilla extract then beat for an additional minute to thoroughly combine.
Assembly:
- Pour the hot cocoa into two large mugs and top each with a spoonful of marshmallow fluff. Right after drinking the hot cocoa, place the extra marshmallow fluff in a container heavily dusted with powdered sugar. After 1-2 hours, the leftover marshmallow fluff will turn into marshmallows.
